Carrot Salad with Apple and Topinambur
A very healthy uncooked vegan dish for all ages. It is a family recipe that I extended with topinambur. Tastes just as well without it.
- 5 carrots
- 1 apple
- 3-4 topinambur
- 1 orange
- 1/2 lemon if you like it a little sour
- 1-2 Tbsp good vegetable oil (i.e. wheat germ oil)
If you don’t like the taste of topinambur or don’t have any, don’t worry. Just leave them out. For me the topinambur adds some bite and a nutty flavour. My children really liked this dish at all ages. Serve it as a side dish to a full meal, as a starter or even as desert.
