Carrot Apple Topinambur Salad

Carrot Salad with Apple and Topinambur

A very healthy uncooked vegan dish for all ages. It is a family recipe that I extended with topinambur. Tastes just as well without it.

Ingredients
  

  • 5 carrots
  • 1 apple
  • 3-4 topinambur
  • 1 orange
  • 1/2 lemon if you like it a little sour
  • 1-2 Tbsp good vegetable oil (i.e. wheat germ oil)

Instructions
 

  • Peel the carrots, apple and topinambur.

  • Grate the peeled vegetables (I use my kitchen machine but of course you could also do it by hand)
  • Squeeze the orange and lemon
  • Mix all ingredients. The oil is important for your body to be able to take in the vitamin A from the carrots.
  • Enjoy!

Notes

If you don’t like the taste of topinambur or don’t have any, don’t worry. Just leave them out. For me the topinambur adds some bite and a nutty flavour.
My children really liked this dish at all ages. Serve it as a side dish to a full meal, as a starter or even as desert.
