Celery is high in vitamin K and fiber and low in calories. Mushrooms contain vitamin D, potassium and zinc, an essential trace element good for still growing children. Olive oil is rich in healthy monounsaturated fats and antioxidants, so don’t hesitate to use a large amount ;-). This pasta recipe is a quick fix if you don’t have a lot of time and hungry children waiting for a tasty dinner.

Mushroom and Celery Pasta

A quick family dinner or party dish. Easy to make and very tasty with lots of garlic.

Ingredients
  

  • 3 cups fresh mushrooms
  • 4 stalks celery with the green
  • 2 cloves garlic
  • 2-3 spring onions
  • 1/2 lemon or lime squeezed
  • olive oil
  • salt and pepper
  • 1 pack pasta or however much you need to feed your family

Instructions
 

  • Start cooking the pasta
  • Cut the mushrooms in chunks and the celery in small slices
  • Cut the onion and dice the garlic
  • Heat up oil in a pan and start simmering the onions and garlic
  • Add Mushrooms and celery stems and sautè until liquid has evaporated

  • Add the green of the selery (finely chopped)
  • Make sure you have enough olive oil, there is no extra sauce in this dish so add plenty of oil.
  • Add lemon or lime juice, salt and pepper to taste
  • Throw the cooked and drained pasta in and serve
