There are several reasons why I try to avoid milk (sustainability, mass livestock farming and the way we treat the cows, health issues). All the alternatives we have in Germany come in tetra packs, which are not very sustainable. Luckily, making your own milk alternative is really easy.
Try other ingredients as almonds, spelt, macadamia, hazelnut. If you don’t like the darker colour from the dates use agave syrup for sweetening. If you like spices try adding cinnamon, cardamom or aniseeds.
If you have a little more time the result will be better if you let the grains and nuts soak in water over night before you make your milk. The best ingredients for a quick milk without soaking are rolled oats and cashews, like in my recipe.
Oat and cashew milk
- 1 1/2 cups oat or rolled oats
- 1/2 cup cashews (or almonds)
- 3 dates for some sweetness
- 1 pinch salt
- 1 quart water
- Put all ingredients in your blender and blend for 1-2 minutes.
- Pour through a fine strainer. That’s it, that’s your milk.
Now to the leftovers. DON’T throw them away. You can prepare a vegan spread for your next sandwich. Blend in garlic, chili, onions, olive oil, avocado, lemon juice, dried tomatoes or whatever you like.
Or mix in 1-2 Tsps. of honey and use it as a face mask. Let sit for 10 to 15 Minutes and wash off with clear water.
