Salted Caramel Snacking Mix
Good for healthy snacking on the go
- 1,5 cups pumpkin seeds
- 0,25 cup sunflower seeds
- 1 tsp cinnamon
- 1 pinch nutmeg
- 2 tsp sunflower oil
- 2 tsp brown sugar
- 0,5 tsp salt
- Preheat oven to 130 degrees. Mix pumpkin and sunflower seeds, cinnamon, nutmeg and 1 tsp sunflower oil in a bowl. Spread the mix on a baking sheet covered with baking paper and bake for 12 minutes.
- Caramelize the sugar and salt in the remaining sunflower oil in a small saucepan over medium heat until golden brown. Stir in the seeds a little at a time until all are coated with the Salted Caramel layer.
- Allow the mix to cool, spread out on the baking sheet.
