Snowy vegan chocolate muffins

Ingredients
  

Muffins

  • 1 cup kidney beans, drained
  • 1 cup oat milk
  • 3 Tbsp coconut blossom sugar
  • 4 Tbsp cocoa powder
  • 1,5 cups whole grain spelt flour
  • 1 pinch ground vanilla
  • 1 Tbsp baking powder
  • 4 Tbsp coconut flakes

Homemade chocolate glaze

  • 1/4 cup cocoa butter
  • 2 Tbsp. coconut oil
  • 1 Tbsp. cocoa powder
  • 1 pinch ground vanilla
  • 1 Tbsp. date syrup

Instructions
 

  • Rinse kidney beans in a sieve and drain.
    Blend beans, oat drink, coconut blossom sugar and cocoa powder to a smooth mixture.
  • Preheat the oven to 350 °F (175 °C) degrees (top and bottom heat). Transfer the bean mixture into a bowl. Stir in flour, vanilla and baking powder. Divide the batter among 8 wells of the muffin tin.
  • Bake the muffins on the middle rack for about 30 minutes. Check with a wooden stick if the muffins are done. Remove from mold, let cool and remove the muffins from the pan.
  • Mix chocolate glaze and spread on muffins. Garnish with coconut flakes.
