Spaghetti with Pumpkin and dried Tomatoes

  • 1 pound uncooked spaghetti
  • 1 medium-sized hokkaido pumpkin butternut would be fine too
  • 15 pieces dried tomatoes in oil, slightly drained, cubed
  • 1/2 cup walnuts, coarsely chopped
  • 2 garlic cloves, chopped
  • 1 chili, cored and finely chopped
  • 2 Tbsp tomato paste
  • 5 Tbsp olive oil
  • fresh parsley, finely chopped
  • salt and pepper to taste


Prepare the pumpkin

  • Heat the oven to 360° F (180° C) top and bottom heat.
  • Wash the pumkin, remove the seeds and cut it in bite sized pieces.
  • Mix the pumpkin bites with 2 Tbsp of olive oil and season with salt and pepper.
  • Put them on a paper lined baking sheet and bake for about 15-20 minutes or until firm to bite.

  • Note: The skin of a Hokkaido is eadible. If you don't like that, just peel it before cutting it.

Prepare the seasoning

  • Core the chili and chop chili and garlic finely. Cut the dried tomatoes and walnuts in chunks. Wash, dry and chop the parsley.

Cook the Spaghetti

  • Now you prepare your pasta according to the packaging. Don't overcook. Please note that the spaghetti will be put in the pan with the other ingredients dripping wet right after cooking.

Sauté the seasoning

  • Heat a big skillet with 3 Tbsp. of oil and add the prepared chili, garlic and tomatoes.
  • After 2-3 Minutes add tomato paste.

Put it all together

  • Add the dripping spaghetti to the skillet. Then add the pumpkin and all the other ingredients.
  • Salt and pepper to taste.
  • Enjoy!


Tip – Pumpkin cutting made easy
Slicing a pumpkin is quite a feat and keeps many from cooking a pumpkin recipe at all. I have often asked my son or my husband to do this hard work for me. But fortunately there are other ways. Here are three methods that make dismantling a pumpkin child’s play:
1. In the oven
Preheat the oven to 300° F (150°C) top and bottom heat. Put the pumpkin on a baking tray and warm it up for about half an hour. Afterwards let the pumpkin cool down – and you can cut it easily and without resistance with a sharp knife.
2. In the microwave
It goes particularly fast in the microwave. Heat it for about 3-4 minutes at 700 watts until the pumpkin can be cut into pieces without effort.
3. On the stove
Smaller pumpkins can also be cooked for about 10 minutes in a large pot, well covered with water.
After such a treatment, even the pitting of the seeds is practically done by itself. Once you have quartered the pumpkin, the seeds can easily be removed with a tablespoon – again, without any effort.
I will never do it differently again!
