Are you looking for a quick but green dish for St. Patricks Day? Here you are, my version of a St. Patricks Soup. Healthy and verrry green. If you like garlic, add more, if you like it spicy add chilies or habaneros.

Spinach Potato Soup

If it has to be something green but healthy spinach is a good choice for St. Patricks day.

Ingredients
  

  • 1 large sweet potato
  • 3 potatoes
  • 4 cups frozen spinach
  • 1 onion sliced
  • 2 cloves of garlic
  • 1 can coconut cream
  • 2 Tbsp olive oil
  • 1-2 cups water
  • chili, salt and pepper to taste

Instructions
 

  • Coarsely chop the potatoes and sweet potatoes.
  • Heat a pot with olive oil and add the sliced onion. Sauté for 2-3 minutes.
  • Add all ingredients and let cook for 12 minutes
    Cooking St. Patricks Soup
  • Take a blender and blend until you like the consistency. Add water and coconut cream if needed.
