This heartwarming vegan soup is a quick make and a healthy lunch in winter times. Kale is especially good after some freezing cold nights. Top it off with some fried tofu and bread croutons and some fresh herbs like parsley.

Ingredients
  

Kale soup

  • 1 bunch kale
  • 1 onion
  • 1 large potato
  • 2 cups water
  • salt and pepper

Topping

  • 1 Tbsp vegan lard (use more oil if you don't have any)
  • 2 Tbsp Olive Oil
  • 1/2 pack smoked tofu or vegan salami
  • some dried leftover bread chunks

Instructions
 

Kale soup

  • wash the kale and remove the big stems
  • Cut the peeled onion and potato in big chunks
  • put the kale, onion and potato in a large pot with the water
  • let cook on medium for about 25 minutes
  • use your blender to prepare a creamy soup, add non dairy milk (or water) if more fluid is needed
  • season with salt and pepper and maybe some instant vegetable broth

Tofu Topping

  • Heat the vegan lard and olive oil in a skillet
  • cut the smoked tofu in small chunks
  • Put the tofu and breadchunks in your pan and fry until nice and brown
