Late summer is zucchini time! I love quick to prepare soup recipes like this so that I don’t have to spend too much time in the kitchen after work, but can still have a healthy and warm meal.

Zucchini soup with croutons

Zucchini Leek Soup

Delicious, healthy and low calorie. Quick to make soup for every day or your large zucchini harvest.

  • olive oil
  • 1-2 zucchini cut in chunks
  • 1 leek sliced
  • 1-2 sticks celery chopped
  • 2 cups oat milk or any non dairy milk you like
  • salt and pepper


  • Heat oil in a skillet, put in the leak and roast for a couple of minutes.
  • Add the rest of the vegetables.
  • Add the non dairy milk and simmer for 5-10 Minutes.
  • Puree with a blender, add salt and pepper and fresh herbs to your like.
