Late summer is zucchini time! I love quick to prepare soup recipes like this so that I don’t have to spend too much time in the kitchen after work, but can still have a healthy and warm meal.
Zucchini Leek Soup
- olive oil
- 1-2 zucchini cut in chunks
- 1 leek sliced
- 1-2 sticks celery chopped
- 2 cups oat milk or any non dairy milk you like
- salt and pepper
Serve the soup with some homemade croutons and some pumpkin seed oil or garnish with herbs.
